Christmas peppermint Chip Cookies!
These are my FAVORITE COOKIES EVER! They taste like Christmas!
The sea salt I add to the top makes them even better!!!
I usually buy these organic peppermint chips at World Market, but they stopped selling them last year and I found them at Sprouts instead. This year we haven’t been close to a Sprouts to buy any- so I searched online for over an hour yesterday before I FINALLY found some and *may* have ordered 10 bags.
You can use your chocolate chip recipe and replace the chips, or you can use your fav sugar cookie recipe and add the chips. Both versions are DELICIOUS!
What you need:
1 1/2 cups kerrygold butter room temp (I actually melt 1 stick to make them the texture I like!)
1 1/4 c organic sugar
1 1/4 c organic brown sugar
1 T vanilla
2 large or 3 small eggs
4 1/2 cups organic flour
2 1/2 t baking soda
1 t salt
2 9oz packages organic peppermint chips
What you need to do:
Heat oven to 350.
Mix sugars, butter and vanilla. Beat in eggs, 1 at a time.
Combine flour, salt and soda in a separate bowl.
Gradually add flour mixture to butter mixture, in 3 separate batches until mixed thoroughly. Add chocolate chips and roll into 2 inch balls. Flatten and sprinkle with sea salt.
Bake for 12-14 minutes
